Kitchen
Alongside Sat, Head Chef John is the backbone of the kitchen. Sat’s right hand man, and has been by his side for 17 years.
John takes charge of the day-to-day running of the food operation, allowing Sat the creative freedom to dream, taste, push, nurture, evolve the food ideology and generally cause havoc on a daily basis on his “Canvas”… the Menu.
Every week a meeting is held with the Senior chefs to discuss all Gastronomic ideas and creations that then can be worked on over the next few days/weeks/months.
The aim is to give the guest a perfectly balanced, thought out tasting menu, incorporating the seasons, the best produce and the skills of an amazing team.
Menus
We offer a 7 or a 10 course tasting menu that changes with the seasons and is produce and flavour driven.
The Menus have been… developed / tested / picked / cooked / chilled / salted / aged / frozen / beaten / whipped / poached / nitro’d / clipped / chured / cured / grown / wood-fired / roasted / seared / boiled / fermented / pickled / dehydrated
… and most importantly - TASTED!
