  • As a Chef, I have been obsessed with flavour for as long as I can remember, it is something I am fortunate to create every day in my working life of over 35 years. The idea of creating a limited release whisky with Wire Works was a no brainer…

    Meeting up with Max and his team and being asked to go on this incredible journey made so much sense, both of us from Derby celebrating our professions of flavour and taste. Picking the aging barrels based on my favourite cask finishes and tasting the whisky at each stage has been an eye opener into the level of detail and expertise this collaboration has harnessed.

    I hope you enjoy this very rare, limited edition, Artisan whisky as much as we have enjoyed making It.

    Lightly peated single malt whisky
    Matured in a first fill in ex-bourbon cask barrel (no 2018-0150)
    ABV 48%
    90 individually numbered bottles
    Banana, melon, orange and milk bottle sweets on the nose, with sweet aniseed, fragrant lavender and sweet coconut on the palate with a tobacco, biscuit and light smoke finish.

    Lightly peated single malt whisky
    Matured first in ex-bourbon barrel (no 2018-0150) and then finished in an Oloroso Sherry quarter cask
    ABV 48%
    90 individually numbered bottles
    Fruit cake, dates, prunes and orange on the nose, with flavours of liquorice root, stewed figs and fruit preserves on the palate, with ginger latte and peat on the finish.

    Lightly peated single malt whisky
    Matured first in ex-bourbon barrel (no 2018-0150) and then finished in an English virgin Oak quarter cask
    ABV 48%
    90 individually numbered bottles
    Vanilla fudge, baked apple, treacle and candied ginger on the nose, with mince pies, bonfire toffee apple, and almond on the palate, with very dark chocolate and citrus finish.
